Simple pork meal by Soren Kristensen

I am not a great cook. One of my friends is a chef and he often laughs at what I eat, but I know what I like and that is to keep things simple, feed myself and move on.

As Australia has lamb, Denmark has pork and we love our pigs. I have a thing for pork chops and this is quite simple:

The difference lies in the relish which I first saw at www.everydaypaleo.com but tweaked it slightly.

Grilled Pork Chops with Tomato relish

2 free range pork chops

Marinade for Pork Chops:

  1. 2 large garlic cloves
  2. 1 tablespoon olive oil
  3. 1 freshly juiced lime

 

Relish:

  1. 1 ½  punnet of cherry tomatoes, quartered
  2. 2 shallots, finely chopped
  3. ¼ cup chopped basil
  4. 2 tablespoon chopped mint
  5. 2 tablespoon red wine vinegar

Chop and mix it all together. The original recipe calls for peaches as well but as they are not in season here in Australia, you can easily do without, if you ask me!

I cook the chops until they have that nice char-grilled color and let them rest for 3 min.

What do I serve it with? Nothing or maybe a Greek salad.
